Access Hollywood Live: Chef Fabio’s Mother’s Day Recipes For Kids
“Top Chef” alum Fabio Viviani stopped by the set of Access Hollywood Live to show off some easy recipes kids can use to help cook for mom on Mother’s Day.
Mothers’ Day Brunch Menu from Piccolo Chef
Tomato Cup Fantasy
Fresh Tomatoes stuffed with rice makes a refreshing and tasty first course during warm weather. The ingredients in this recipe are probably in your pantry and the preparation is a snap.
4 Servings
Ingredients:
1 and 1/2 cups of cooked and chilled rice
4 large firm tomatoes
1/2 avocado, diced
1/2 bell pepper diced
1/2 cup of corn kernels
1 carrot, peeled and diced
(Your choice of:) Finely diced cooked chicken breast, turkey, shrimp, ham, or tofu. You may also select tuna or lentils for the protein if you prefer it.
extra virgin olive oil
red wine vinegar to taste
salt and pepper to taste
Preparation:
Rinse the tomatoes and cut off the tops. Scoop out the pulp.
In a bowl mix together all ingredients except for the tomatoes. Season to taste with olive oil, vinegar, salt and pepper.
Spoon rice mixture into tomatoes, garnish with parsley and serve!

Spring Veggie Scramble
Not just your ordinary scramble, this fluffy egg dish is packed with protein from the eggs and filled with fresh spring vegetables that you can mix and match to suit your taste! Kids have a blast choosing and chopping up their choice of spring veggies with a lettuce knife and of course, nothing says spring more than farm fresh eggs!
Serves 4
Ingredients:
5 large eggs
1 Tablespoon water
extra virgin olive oil
coarse sea saltââ¬Â¨
freshly ground black pepperââ¬Â¨
1 cup of a mixture of your choice of the following vegetables :
chopped pearl tomatoes
sliced green onions
shredded baby carrots
fresh spring peas
diced asparagus
diced colorful bell peppers
or any other fresh vegetable you like
Optional other add-in’s :
Finely diced cooked chicken breast, turkey, ham
Shredded farm fresh cheddar cheese or other favorite cheese
Minced fresh herbs
Directions :
Warm large skillet over medium heat. In a bowl, whisk together eggs with water and a few pinches of salt and pepper to taste.ââ¬Â¨ Add your choice of vegetables, and other optionial add-in’s if using, to the eggs and stir to combine.
Drizzle the warm pan with olive oil and pour the egg mixture into the pan. Using a wooden spoon, stir the egg mixture until eggs are cooked through and are light and fluffy but not dry. Serve accompanied by Rainbow Fruit Kebabs with Honey-Orange Dip and Tomato Cup Fantasy!

Rainbow Fruit Kebabs with Honey-Orange Yogurt Dip
A fun way to enjoy fruit with a tasty dipping sauce, these fruit kebabs are fun to make and packed with good for you vitamins from the fruit, and calcium and probiotics in the yogurt sauce! A great way to say, “I love you” to Mom, from the inside out!
Makes 1 serving.
Ingredients:
1 Tablespoon fresh orange juice, plus more to taste
1 pinch orange zest (optional)
Honey to taste
1/2 cup Plain Yogurt
1 large slice of cantaloupe, cut into chunks
1 large slice of honeydew, cut into chunks
3 large ripe strawberries, tops removed
wooden beverage stirrers (to use as the kebabs!)
Directions:
1. Whisk together the orange juice, zest, honey and yogurt together in a small bowl. Whisk in more honey to your liking and set aside.
2. Skewer fruit chunks carefully. Serve skewers with yogurt dipping sauce!
